Selenium and Mercury Toxicity: The Tale of Fish

نویسندگان

چکیده

Not only is fish a good source of protein, but it also provides essential fatty acids such as omega-3, vitamins vitamin D, and minerals selenium. However, consumers are concerned about exposure to mercury through consumption. The degree depends on both the amount type consumed. Additionally, recent studies have shown that Se can prevent poisoning. To better understand risk seafood consumption, understanding selenium-mercury interaction useful. This new 4-page document first in "Fish Human Nutrition" series, which seeks help make knowledge-based decision when choosing their seafood. Modification of mercury toxicity by selenium: practical importance?

The interaction between mercury and selenium may involve a variety of toxicologically and biochemically distinct processes. In this paper, the interaction between inorganic mercury and sodium selenite, the interaction most extensively studied, as well as the interaction between methylmercury (MeHg) and selenium, the interaction perhaps most significant for non-occupational human populations, wi...

Evaluating Total Mercury and Methyl Mercury Contents in Canned Tuna Fish of the Persian Gulf

Due to hygienic risks of mercury residues in food and marine originated supplements, measuring total mercury and methyl mercury contents of canned tuna as a highly consumable marine food product is essential. In this study, 40 canned Tuna fish (from Persian Gulf) were collected in 2015 and then flame atomic absorption spectrometer (FAAS) and thermo gas chromatography mass spectrophotometry were...

Mercury toxicity

Mercury is a metal found in elemental, organic, and inorganic forms in the nature. This substance is present in the composition of earth crust, soil, air, and even in some tissues of plants and sea animals. Each year nearly 3400 tons of mercury compounds are released in the environment, which 95% settle in the soil, 3% in the oceans, and 2% in the atmosphere. Different industrial products li...

Factors controlling the bioaccumulation of mercury, methylmercury, arsenic, selenium, and cadmium by freshwater invertebrates and fish.

Concentrations of mercury (Hg), methylmercury (MMHg), arsenic (As), selenium (Se), and cadmium (Cd) were measured in atmospheric deposition, stream water, and biota in two streams in western Maryland. Overall, concentrations were slightly higher in the water of the lower pH Herrington Creek tributary (HRCT). Bioaccumulation factors were also higher for HRCT compared to Blacklick Run (BLK). MMHg...
